A pH electrode, when it is properly manufactured and kept clean, will retain its physical characteristics for a long time. A common problem associated with pH measurements is the use of a pH electrode that hasn't been properly cleaned. This is very important because, during calibration, the instrument assumes that the electrode used is clean and that the standardization curve created during the calibration process will remain the same until the next calibration. pH meters on the market today will allow an offset of approximately ±60 mV. The deviation from 0 mV is not unusual, in fact it represents the true characteristics of the pH electrode. The deviation from 0 mV becomes a problem if it is the result of calibrating a dirty electrode. The figure below shows that the pH measured by a dirty electrode changes over a period of time. This results from the residue on the pH electrode bulb dissolving into the solution and the electrode gradually returning close to its true characteristics. The resulting pH measurements, based upon the calibration of a dirty electrode, will then be incorrect.

HANNA instruments®‘ HI 221 & HI 223 compare the characteristics of the pH electrode from one calibration to the next. In case of large variances in electrode condition that can only be the result of dirt, these meters alert the user that the electrode needs to be properly cleaned prior to the calibration process.

Recognizing dirty pH electrodes Most pH measurements in the process of making wine are made in the must. A pH electrode gets dirty very rapidly when measuring the pH of must. This is because sediments deposit on the sensitive pH measuring bulb and on the pH electrode junction. This becomes a big problem during the actual pH measurement and even after, if the electrode has not been properly cleaned. A dirty pH electrode can give inaccurate results that are up to 0.5 pH, even after a pH calibration has just been performed. Knowing when to clean pH electrodes Conventional pH meters do not warn the user when the pH electrode is dirty. A common example of this occurs when, just after calibrating the instrument the pH electrode is immersed into the pH 7 buffer, and the reading is lower than expected (pH 6.8 or 6.9
instead of 7.0). HI 222 uses the HANNA instruments®’ unique technology to detect when the electrode is dirty and give a warning during calibration. Cleaning pH electrodes It is of the utmost importance to properly clean the pH electrode prior to use. A proper cleaning of the electrode must be done with appropriate cleaning solutions, in order to remove all the deposits on the sensitive bulb and on the junction. HI 70635 (wine deposit removal) and HI 70636 (wine stain removal) are tailor made cleaning solutions for wine making.

With a resolution selectable between 0.01 and 0.001 over the -2 to 16 pH range, pH 212 and pH 213 are designed for those users that require added accuracy. The pH and temperature are displayed simultaneously and all pH measurements are automatically compensated for the effects of temperature. pH 213 also measures mV range when used with ORP electrodes. The large horizontal display shows both pH (or mV) and temperature. Calibration can be at one or two points aided by automatic buffer recognition at pH 4.01, 6.86, 7.01, 9.18 and 10.01. A stability indicator ensures proper calibration and accurate measurements. Any particular measurement can be stored and recalled at a later time.
